Now me, I have to go and mess up a good thing by sauteing mushrooms and throwing 'em in, adding a little Tiger Sauce, crushed pepper, cayenne pepper and colby and pepper jack cheese and whatever else I think about throwing in there...I svck.

I like the way you think... according to my S-o, my dry-spice and condiment "collection" is becoming a "problem." Razz

Yes, I really do need 9 different kinds of mustard!

The overcooking thing is truly baffling to me, and I know people are reading this thinking we're the ones out of our minds because I've actually gotten into real arguments with people over the proper way to cook a steak and that medium well to well is literally turning it into garbage.

If you eat steak well done, stop eating steak. Seriously, just order the chicken (which people also tend to overcook habitually). Why is everyone so scared? I mean, you can eat steak however you want, but I consider it a waste of perfectly good food and that offends me as a foodie.

Pasta is something I've also had at other people's homes horribly overcooked. Al dente people! "To the bite." Slightly undercooked. Ignore the package instructions and just try a strand every few minutes. And put salt in the water!

As for burgers, i need mine to be a little pink. I actually prefer them medium (by my standards) but I ask for them medium-rare when I'm out since they're almost always overcooked.

steaks i always order medium rare to rare depending on the restaraunt. burgers there is really no point though. having a rarer burger doesn't make it more tender. being a ground meat it's much safer to be cooked throughout. i think the rare burger thing came about because people feel that rare is better for all beef, or it makes them feel cultured or something

Darn tootin' I'm cultured! I eat with my pinky up and everything!

I like a thick, juicy burger and I've never had a well-done burger that was juicy. No matter how thick it is, if it doesn't have any pink it seems tough and dry.

Personal choice.

Not my fault you chose wrong. Wink

Well, my preference really goes back to a single experience with a burger I had at the local Hoss's about a year ago. They don't ask how you want your burger cooked, which is fine since many restaurants now cook their burgers to a single standard, somewhere between medium and medium-well, but still juicy.

Well, the burger was awful. It was charred around the edges and dry as a bone. It was definitely well-done, and I'm not sure if that's Hoss's thing (their clientele is rather up there in the years) or if I just got a burger from a cook at fell asleep at the grill. In any case, my guest's burger was also overcooked.

So, typically I prefer at least some pink, since the edges tend to char if you cook the whole way through, depending on the size and thickness of the patty. Ground beef should usually be cooked to a higher temperature than a cut of steak, but a little pink in the center is still safe.

I don't go around eating foie gras and caviar... I just figure that I have to eat no matter what, I might as well enjoy it. All because I'm annoyed by people who order steak well-done (and if you've ever worked in a decent restaurant or independent steak house, you'd understand) doesn't mean I think i'm more cultured than everyone else. I don't see how enjoying good, simple food is something so many people openly reject. It's not culture, it's common sense.
